alpha-amylase

Definition

alpha-Amylase is an enzyme that catalyses the endohydrolysis of (1->4)-alpha-D-glucosidic linkages in polysaccharides containing three or more (1->4)-alpha-linked D-glucose units. It is a natural component of honey. In honey bees, alpha-amylase is secreted by the hypoharyngeal gland. In addition, it may originate from nectar or honeydew.
